Cracked Wheat with Tomatoes and Parsley

This is a very refreshing salad in which parsley and mint provide the aroma and the taste, combined with the refreshing taste of tomatoes and the body of cracked wheat combined with olive oil.  It can be served as a side dish to roasted meats, or alone as a very healthy snack.  It may also be served with pita bread as a main dish.


Ingredients:
  • ½ cup of cracked wheat or couscous.
  • 2 ripe tomatoes cut into small pieces
  • 1 green onion sliced into small pieces
  • 1 spoonful finely cut parsley
  • 1 small spoonful finely cut mint
  • The juice of ½ lemon
  • Salt and pepper to taste and
  • 4 spoonfuls of KOTINOS Extra Virgin Olive oil

    Preparation:
    Cook the cracked wheat by boiling it for 15-20 minutes or until it becomes tender but not too soft.  Drain and let cool. Remove excess water byl pressing the wheat between fingers, and place in a salad bowl.  Add the tomatoes the onion, the parsley and the mint. Sprinkle the salt and the pepper, the lemon juice and the olive oil.  Mix very well, and serve as a side dish or with pita bread. Leftovers can be kept in a covered container in the refrigerator for a day or two.
