Choose a bottle from a shelf that is at
least partly protected from the often intense overhead lights in your store.
Prefer a product which indicates its maximum
acidity. Any virgin olive oil with an acidity level up to 1% can be called
Extra Virgin. There is however a big difference between an oil with an acidity
level of 1% and one with acidity less than 0.5%. KOTINOS Extra
