Green beans with Olive Oil and Feta

  This is a very traditional way to prepare fresh green beans. It is easy and quick to prepare and the resulting dish is full of flavor and color. The simplicity of this recipe brings out the unique flavor of each incredient and with some hearty bread makes a healthy and tasty meal.

  • 2 lb of green beans
  • 2 vine ripe tomatoes
  • Salt and pepper to taste and
  • 1/4 cup of KOTINOS Extra Virgin Olive oil
  • Feta cheese (optional)

    String and rince beans. Add them to heavy pot with Kotinos olive oil. Simmer tightly covered until tender (about 15minutes). Add crushed tomatoes, salt, pepper and simmer until sauce is reduced (about 15 minutes). Right before serving add chunks of good quality feta cheese. For additional flavor drizzle with Kotinos Extra Virgin Olive Oil.
